Inspired by ice ciders La Pomme Givrée is a unique and original product.
This all-natural nectar is only obtained with apples ripened late at 1000m altitude.
More than 3 kilos of carefully sorted apples are needed to get this bottle. Their particularly aromatic juice is then reduced by cryo-concentration and fermented. This work conducted in the spirit of a great sweet offers us in this vintage a nose very clear and intensely fruity.
With 10% alcohol and 180 grams of residual sugars the mouth is ample and a nice balance between sugar and acidity that ensures an astonishing taste persistence.
It is a product of gastronomy to taste fresh (about 10° C) for an original taste trip in the company of a "foie gras", a subtly spicy cuisine (white meat, fish), or just for himself!

From the same varieties as La pomme Givrée, his little sister La pomme rotie sees its juices reduced by cooking slow and controlled.
This technique also used by the old people in Provence to make the cooked Christmas wine makes it possible to obtain a magnificent amber juice. This one after a temperature-controlled fermentation shows an alcoholic strength of 11% vol and a sweetness of 160 g / l balanced by a very present acidity and a fine astringence of apple skin!
At the tasting, this sweet character combined with delicate aromas of baked apple and caramel reminiscent of tarte tatin makes La pomme rôtie the perfect accompaniment to apple or slightly chocolate desserts.
As a table-top product, you have to dare it on well-ripened pressed cheeses or on a dry ham of good origin.
